¿Qué vida le podría dar al campo la ganadería?
Bueno, tú imagínate que aproximadamente en una caballería (13,42 ha) tenemos 30 cabezas de ganado mayor, entre caballos y bueyes y vacas.
Tú te imaginas que yo pudiese disponer de toda esa abundancia de carne y de toda esa abundancia de cosas, yo no me puedo imaginar el salto que daría en sostenibilidad. Porque ya no tendría que pensar nada más que en comerme y cebar cerdos, es decir, que sería un producto que tuviésemos en la mano que funciona prácticamente con el sol, por ejemplo.
Yo te digo que hay mucha ciencia aplicada que vierte hacia este modelo de vida del que estamos hablando, como pueden ser las fuentes renovables de energía, la equidad de género, hay proyectos de todo tipo, el uso eficiente de los fertilizantes, del agua, de construcciones bioclimáticas. Es increíble, no me alcanzan 10 vidas, porque el tiempo se nos hace largo y tedioso porque todo lo tenemos que hacer nosotros para nuestros caprichos y nuestros gustos y nuestra calidad de hacer las cosas, prácticamente no encontramos ni con quien hacer la albañilería.
Tenemos que hacerla nosotros y nos demoramos por eso, pero tú no te puedes imaginar, solamente lo que existe, de forma natural, para refrescar una habitación, para tener una habitación que esté así, ni más ni más, 10 grados por debajo de la temperatura normal, solamente por el diseño, hacer habitaciones que respiren.
Hay muchas cosas en arquitectura que entonces vienen a la permacultura y a la agroecología que estamos defendiendo si la familia vive en la finca. Hay muchas cosas y muchos conocimientos que obtener de tu sistema para ver qué cantidad de recursos tú gastas para eliminar hierbas y son buenas en el sistema porque dan polen para la abejita, vive el bichito que se come el pajarito que está ahí esperando para cuando tu siembres se coma la palomilla del maiz, está el pajarito que se come la garrapata que va a poner en una planta, hay muchas cosas hacia esta parte.
Entonces la ganadería, para mi, de la mano del pequeño agricultor y de su cultura, y de su comercialización, sería un poder para la pequeña finca agroecológica radical, porque, bueno ahora tiene un mejor precio, pero no tiene comparación el hecho, el costo de producir mil libras de carne de res para un agricultor como el costo de producir 1000 libras de cerdo.
Es como decir, para qué te voy a decir, no tiene que ver una cosa con la otra, es como usar, por ejemplo, el petróleo que venga de europa como energía, o usar la energía del estiércol de las vacas convertida en biogás para cocinar.
Para mi la diferencia entre producir carne de cerdo un pequeño agricultor o producir carne de res, está por ahí.
What life could livestock farming give to the field?

We have to do it ourselves and we take time for that, but you cannot imagine, only what exists, naturally, to refresh a room, to have a room that is like this, no more and no more, 10 degrees below the normal temperature, just by design, make rooms breathe.
There are many things in architecture that then come to permaculture and agroecology that we are defending if the family lives on the farm. So livestock, for me, from the hand of the small farmer and his culture, and its commercialization, would be a radical power for the small agro-ecological farm, because, now it has a better price, but the cost of producing a thousand pounds of beef for a farmer is not compared as the cost of producing 1000 pounds of pork.
It is not related one thing to the other, it is like using, for example, the diesel that comes from Europe as energy, or using the energy of cow dung converted into biogas for cooking.
For me the difference between producing pork a small farmer or producing beef is there.
